Icelandic Jólakaka

Iceland, is amazing. It has everything you are expecting to find there, and more. Thanks to Icelandmag we got to bring with us this delicious recipe.

Jólakaka means Christmas cake, even though is enjoyed all year around.


What do you need to have in your kitchen:

  • 100 g butter
  • 125 g sugar
  • 2 eggs
  • 200 g flour
  • 2.5 tsp baking powder
  • ¼ tsp lemon juice
  • ½ cup milk
  • ½ cup raisins


First of all, we whip the sugar and the butter together until it turns light and fluffy.

Add the eggs, one at a time, and also the lemon juice. Sift the flour and baking powder into the mixture.

Finally, stir in the raisins. Place into a baking form and bake at 175 degrees  for one hour, until you its soft and baked.

Sprinkle powder sugar, or even more juicy, mix some powder sugar with water, and pour over the cake. What about hot chocolate all over? Let me know, how you prepare it!
